Chicken and cheese broc noodle stuff.

So I'm just going to type out my process and at the bottom write an ingredient list. Here we go!

Today's meal came together out of necessity. I had half a roast chicken left and it was mostly dark meat. I don't like dark meat. It makes me sad. So anyway. I pulled the chicken off the bones and thought about what I was going to do with this chicken...and this is what I came up with.

Step 1 - Make a roux (I used butter and tapioca starch, you can use flour)
Step 2 - Slowly add 1/2 a container of chicken stock while whisking. (I used what was left over from homemade gravy yesterday, it was a 32oz container and I used a little less than half yesterday.)
Step 3 - 3 tablespoons of cream cheese while whisking
Step 4 - Salt and pepper to taste
Step 5 - Taste the sauce. It will be kind of sticky. This is okay.
Step 6 - A few handfuls of shredded cheese
Step 7 - Whisk in the cheese.
Step 8 - Thin with a few splashes of milk.
Step 9 - Frozen broccoli (2 or 4 handfuls. We like broccoli.) Stir. Let cook for awhile.
Step 10 - Stir in the chicken and let simmer.
Step 11 - Boil some pasta (I used Farmo- corn and rice penne) and cook it to al' dente (This is important. I did not do this and when I combined all the stuff, the hot cheese sauce cooked the pasta further resulted in delicious but ugly pasta.) Drain.
Step 12 - Combine sauce goodness with pasta-y goodness.
Step 13 - Nom. :)

Ingredients:
  1. 2 tablespoons butter
  2. 1 tablespoon floury substance
  3. 12oz Chicken stock
  4. 3 tablespoons cream cheese
  5. 3 cups shredded cheese
  6. 1/2-3/4 cup milk
  7. 3-4 cups frozen broccoli
  8. 2 cups cooked chicken
  9. salt and pepper to taste
  10. 12oz uncooked penne
FIN. This may not be a refined recipe but it sure is tasty!! :)

What do I mean by food fight?

A food fight is basically food that is thrown about. In my house, it's kind of how I cook! I'm Mandi and I'm going to blog about the meals I make by throwing food together in a pan and praying it turns out okay. It usually does. I'm not sure why, other than luck! I have next to no culinary background and didn't even help my mom much in the kitchen. (Sorry mom!) I'm 22 years old and I have Celiac Disease. Having Celiac basically means I can eat no wheat, barley, rye and in my own case, oats without an ugly autoimmune reaction. Avoiding those four things may sound simple, but they are in many commercial products, so I've learned to cook many things from scratch!

A lot of times, people ask for the recipe. I simply don't use them. Instead, I taste as I go, making adjustments here or there. So my measurements are not exact...but not to worry! This is about growing and learning and experimentation.
